The Manor School of Fine Cuisine has become well known and respected in the industry for the foundation course, which we have run over the last 21 years. We were rated in the top ten International cookery schools for this course in 1996.
The foundation cookery course covers:
Safe use of a kitchen equipment, hygienic and safe kitchen procedures.
Safe use and handling of knives / maintaining and sharpening knives.
Table setting for different occasions including flowers for the table, flowers with food and napkin folding.
Basic nutrition and cooking appropriate dishes for a well balanced diet.
Menu planning, costing and selecting produce.
Different basic cooking techniques poaching, steaming, char-grilling, roasting, stewing, stir frying, sautéing and baking.
Correct storage of foods to maintain freshness and avoid cross-contamination.
Preparation, cooking and serving of straightforward, adaptable and exciting recipes.
Cooking for guests with special dietary requirements including Vegetarian cookery.
Use of recipe books, internet recipes and other resources. |

| We have 1 chef/ teacher for every 4 guests, as well as kitchen porters to wash up and clear up for you.
The course is suitable for novice and nervous cooks, beginners, youngsters and those wishing to work in ski chalets, shooting lodges, fishing lodges and yachts. Great for gap year students and fits the Duke of Edinburgh Award criteria. We opened our door to Duke of Edinburgh students in July of 1992. This year will be giving the course free to our 100th. student who books on the course |
