Survival Cookery Course for Young People
The Duke of Edinburgh Award Skills Residential Course.

3 Day residential course £500

If you are studying for a Duke of Edinburgh Award and would like to learn to cook, then this course is ideal.
We have tailored the course for Duke of Edinburgh Award candidates. It is a 3 day Residential Course, with cooking every day market trip and local shopping trip.
This course is perfect for those wanting to complete their award while learning an invaluable life skill in a fun environment
Vegetarian, lactose free and gluten free dietary requirements can be catered for on request.
Additional nights can be added if needed and accommodation can be organised for those accompanied by an adult.

We will be running these courses in September 2020 and April 2021 or by request for groups of 4+

ITINERARY
TYPICAL ITINERARY - Please note that this itinerary is for guidance only and details can be changed according to individual needs and wishes. Photographic records will be taken throughout the sessions to record evidence for your Duke of Edinburgh award.

Wednesday Day 1
- Arrival and settle into your room.
-13.45 Meet your hosts, discuss the programme and menus.
14.00 join Claire in the kitchen to prepare supper.
19.30 last minute prep, to complete dinner with, plating up, garnishing and serving the delicious food that you prepared earlier in the day with like - minded people and interesting conversation Over a three course supper we will plan an outline for our market trip and purchases the following morning.
After supper we all have the opportunity to sit back and unwind on one of the terraces, in the gardens or by the log burner.

Thursday Day 2
Breakfast 8.45am
9.45 we will go to the historic town of Hesdin to select the freshest seasonal ingredients for the cookery session from the renowned Hesdin market, where local farmers and growers sell their produce.
After shopping in the market we will return to the School for a light lunch of local cheeses, cured meats and salads.
Guests will then join Claire in the kitchen to prepare our three course evening meal.
The late afternoon is yours to enjoy the garden, before meeting back in the kitchen at 19.00 to complete dinner with some last minute food prep, plating up and serving the delicious food you have prepared.
We will all enjoy eating and discussing the meal together.
Friday Day 3
Breakfast 8.45am
9.30 we will go to Hesdin to select and buy ingredients for the cookery session along with a visit to the Traditional Boulangarie Pâtisserie.
After shopping in the market we will return to the School for lunch.
Guests join Claire in the kitchen to prepare a three course supper with canapés- The late afternoon is yours to enjoy the garden, before meeting back in the kitchen at 19.30 to complete dinner with some last minute food prep, plating up and serving the delicious food that you have prepared.
We will all sit down together to enjoy eating and discussing the meal.

Saturday Day 4
Breakfast between 8.00 and 9.30.
Then there will be time to say fond farewells and leave with your new-found skills, new ideas, a renewed passion and confidence for cooking.
A portfolio of all the recipes covered during your stay will be provided to every guest.


Typical Breakfast Fresh baked pastries and breads, including croissants, pain au chocolat, brioche, baguettes, raisin or apple swirls.
- Homemade preserves (made from fruits grown in our garden), marmalades, local honey, yogurt and cereals
- Homemade hot waffles fresh from the iron with butter and cinnamon sugar
- Speciality tea or coffee, or enjoy a pot of hot chocolate.
